The idea for aestas Sushi was originally born from the need to establish in Santorini a premium sushi restaurant with refined flavors, offering a unique dining experience in a space where atmosphere, style and charm dominate.

Japan is famous for its minimalist way of thinking and as such, our philosophy couldn’t be any different, following three simple rules.

Excellent ingredients, passion for cooking and a unique combination of colors and authentic flavors…the absolute combination to turn Sushi into Art!

Our menu is a showcase of our creativity, reflecting our identity. Imaginative Sushi dishes which will satisfy even the most demanding palettes.

Shrimp Tempura, Lava Roll, Spider Roll, California, Spicy Salmon, Salmon Teriyaki, Tuna, Salmon, Sea Bass, Shrimp, all the fish and seafood that we use are fresh and cleaned with special cuts and techniques and prepared exclusively by us.

All our Sushi Sauces are handmade as well, composed with fresh ingredients.

And for those who are hesitant to experience Sushi we offer very interesting options, with dishes that will gradually introduce them the sushi.
